Big Tree Distillery is the result of a gin-loving husband and wife team who love good gin so much they decided to make their own. Introducing Catherine and Gary, who are devoted to bringing you a truly home-grown and delicious award winning gin. Big Tree Gin is distilled in the Macedon Ranges region of Victoria, on Jack’s Springs Farm producing a range of farm crafted small batch Australian gins.

The Blue Mountains Gin Company is a business, run by locals who have lived in Katoomba for more than 30 years. We love the mountains and are great enthusiasts for spirits: the Blue Mountains Gin Company melds these two passions.

John Ibrahim's journey into whisky started by chance after he purchased Dysart House in Kempton, Tasmania. Dysart House came to be leased to Redlands Distillery, now Old Kempton Distillery, and through this process John met Bill Lark, the Godfather of Tasmanian Whisky.

My father Umberto, was given home-made Limoncello from a dear family friend called Teresa. Teresa made an excellent Limoncello and everyone in the family enjoyed drinking it, but Teresa only produced enough for family and close friends.

The brothers and founders, Shaun and Leigh are seekers. Bec and Craig, the husband and wife duo behind multi award-winning Ginny Pig Distillery. Two former nurses who swapped scrubs for stills! Today, instead of bandages, they obsess over botanicals! As a fanciful dream to infuse the iconic spicy notes of a hot cross bun into Bec’s favourite beverage - gin. So in between shiftwork and (very little) sleep - all from the ‘cosy comfort’ of our suburban garage - they embarked on a self-taught journey to do just that.

Hartshorn was born from a need to reduce waste and a desire to flip the script on traditional spirit-making and flip the bird to those who said it couldn’t happen. Hartshorn Distillery shares land with Grandvewe Cheeses. They're the same family doing different things with the same goal — reduce waste, look after each other, look after the planet. So when it comes to their products, if there’s a swill, there’s some whey.

Imbue Distillery brings you spirits rich with flavour and imbued with the story of the founders Mel & Mick Sheard. Their good friends Luke + Nikki joined the Imbue family in 2019 and bring much needed logic to our hair-brained plans!

David Danby's journey unfolded behind the bars of Adelaide's top establishments, cultivating a deep understanding of the world of libations. In 2014, fuelled by a profound appreciation for exceptional liquids, he established Imperial Measures Distilling. The meld of his hospitality background and love for extraordinary beverages forms the essence of our craft.

In 2015, founders Nick and Ally asked themselves a question many of us ponder: “If you could do anything for a living, what would it be?” Over a whisky, Ally voiced the thought that would change their lives: “Someone out there makes what we’re drinking for a living.” Driven by a relentless commitment to quality, Ally honed her craft as a self-taught distiller, earning recognition for her expertise and uncompromising standards. Nick drew on his creative background in the film industry, bringing a fresh perspective to strategy, product development, and operations—turning ambitious ideas into reality and building strong connections along the way.

Meet Kilderkin Distillery's Rebecca Matthews & Chris Pratt. Starting over 15 years ago following a lifelong interest in distilling. After a few years of dreams and a few more careful planning, they fulfilled their ambition by establishing Kilderkin Distillery in 2016 and launching our first gins in 2017, thus adding another chapter to distilling in Ballarat.

The Packing Shed Distilling Co was a COVID baby; an idea born out of the pandemic. While they sat twiddling their thumbs and wondering what direction to take an idea began to take shape. By the end of 2020 after 9 months of applications, paperwork, emails and meetings we were approved as a distillery.

After more than twenty years producing incredible wines and establishing itself as one of Australia’s largest wineries, Salena Estate is expanding and we introduce you to their newest venture…Lock 4 Distillery. Owners Bob and Sylvia Franchitto have diversified their practice to include spirits and liqueurs. They use wine produced by the grapes from our vineyards and this is distilled on-site.

Former Gin Palace bartender Shaun Byrne met French winemaker Gilles Lapalus through the late Gin Palace owner and Melbourne bar scene identity Vernon Chalker. Their immediate friendship led to establishing a boutique Australian vermouth brand Maidenii which fuses native botanicals with quality wine; they’re the rock star bottles you see lined in only the best bars in the country.

Mt Uncle Distillery is the brainchild of Mark Watkins, a bloke whose pursuit of exceptional flavour is legendary around here. With a deep connection to North Queensland and a spirit that’s never content with ‘good enough,’ Mark’s the driving force behind their innovative methods and their courage to tread where others don’t. He’s the one who, let’s just say, went on an *adventurous* trip to Mexico and came back with the first Blue Weber agave seeds to legally (ahem) grace Australian soil. That pioneering, slightly cheeky spirit? That’s pure Mt Uncle. Mark’s vision was to create world-class spirits that capture the unique character of our region, and that’s exactly what keeps us going every single day.

Some dreams simply have to be realised, as was the case with John and Anna’s vision for Pietro Gallus Estate. The couple’s shared passion for seasonal produce, outstanding food and the fine art of distilling Grappa has led to the journey that has brought Pietro Gallus to life.

Established by Dylan and Falecki, this boutique distillery is nestled within a footprint of less than 150m2 and is the first distillery of any kind in the City of Parramatta and one of only a handful in the western suburbs of Sydney. Commencing in 2020 and officially opened for trading in 2021, The Primary Goods Co Distillery was birthed out of the commercial and social effects of the pandemic with lock downs and restrictions offering a unique opportunity to chase dreams and focus on transforming a hidden commercial storage unit into a multi award winning distillery.

It all began in 2015 when two mates from Adelaide hatched a crazy plan to start a gin distillery. One had a history in the food & beverage industry, the other – a graphic designer – passionate about creating brands. From humble beginnings in an inner-suburbs back yard garage to becoming an Adelaide institution, the Prohibition brand soon became a success. Prohibition opened the doors to their city Distillery in 2017, featuring a beautiful 900L Copper Pot Still, ‘Mary’. A few years later the venue expanded with the opening of Bootleg Coffee Co and Next Door cocktail bar. The commitment to ultra-premium craft gins starts at Gilbert Street and extends into every venue and bottle shop representing our spirits – across Australia, and around the world. With awards from San Francisco to Singapore and across Australia, our globally awarded spirits are truly world class.

The brain-child of the gin-loving husband and wife duo, Jon and Nicole Durdin, Seppeltsfield Road Distillers produce gins that are bright, fresh, exciting and above all delicious, carefully crafted, with patience, dedication, and a commitment to only using the highest quality ingredients.

In 1910, Dr Angove’s son, Carl, travelled to Renmark, in South Australia’s Riverland, to establish the regions first winery and distillery, this would eventually become the home of St Agnes Distillery. Carl’s plan was to use the plentiful supply of table grapes to distil a plain spirit for making the fortified wines that were popular at the time. In 2025 the St Agnes distillery proudly celebrates 100 Years of Distillation with the release of two iconic spirits the St Agnes XXO 50 Year Old Exceptional Reserve and the St Agnes XO 30 Year Old Centenary Reserve Single Cask, Cask Strength and special limited releases.

Jacqui Henshaw is a highly awarded advertising and art photographer, with works in both public and private collections. She holds a BA in photography and an MA in entrepreneurship. Jacqui’s sea and cloud art image is featured on the label. The brand name is inspired by the title of original artwork from 2002, by Jacqui. Her ongoing series, Travelling While Standing Still, celebrates the human ability to dream or to travel through imagination, without stepping on a plane or a train. Keith Smith is a highly awarded graphic designer with international clients in the tourism, beauty, skincare and alcohol industry. He’s also a multi-talented musician and songwriter/composer.

Born out of Perth, Western Australia, Whipper Snapper Distillery [WSD] was founded by brothers-in-law; Alasdair [Al] Malloch and Jimmy McKeown. Young and passionate whiskey drinkers Al and Jimmy were searching for something exceptional that helped showcase Western Australia’s produce and put WA on the map. In the pursuit to create the perfect Australian whiskey, Al and Jimmy wanted to redefine the perception of WA grains and in 2014, two young whipper snappers opened the doors to their East Perth Urban Distillery.
